- 4 medium tomatoes
- 1 Tbsp. Dijon mustard
- 1/4 tsp. salt
- 1/4 tsp. freshly ground black pepper
- 1/8 tsp. ground red pepper
For the Crumb Mixture
- 6 Tbsp. butter, melted
- 1 cup crisp crumbs
- 1 cup freshly grated Parmesan cheese
- Prepare oven: Preheat broiler with oven rack 5 1/2 inches from heat.
- Cut and season tomatoes: Cut tomatoes in half. Spread cut sides with mustard; sprinkle with salt, black pepper, and red pepper.
- Top with crumb mixture: Place tomato halves on baking sheet. Combine butter, crisp crumbs, and cheese. Spoon crumb mixture on top of each tomato half.
- Broil tomatoes: Broil 2 minutes or until crumbs are golden brown and tomatoes are thoroughly heated.
