Crusty Broiled Tomatoes

INGREDIENTS

  • 4 medium tomatoes
  • 1 Tbsp. Dijon mustard
  • 1/4 tsp. salt
  • 1/4 tsp. freshly ground black pepper
  • 1/8 tsp. ground red pepper

For the Crumb Mixture

  • 6 Tbsp. butter, melted
  • 1 cup crisp crumbs
  • 1 cup freshly grated Parmesan cheese

DIRECTIONS

  1. Prepare oven: Preheat broiler with oven rack 5 1/2 inches from heat.
  2. Cut and season tomatoes: Cut tomatoes in half. Spread cut sides with mustard; sprinkle with salt, black pepper, and red pepper.
  3. Top with crumb mixture: Place tomato halves on baking sheet. Combine butter, crisp crumbs, and cheese. Spoon crumb mixture on top of each tomato half.
  4. Broil tomatoes: Broil 2 minutes or until crumbs are golden brown and tomatoes are thoroughly heated.
